Featuring Red Rich Fruits’ Granny Smith Apples, these Apple, Ricotta, Honey & Walnut Bites are a quick, easy and delicious starter to create maximum impact with minimum effort.
Makes 30 Pieces
2 Red Rich Fruits Granny Smith Apples
100g packet wafer or water crackers
375g smooth ricotta
2 Tbsp honey (plus extra for garnish)
1 small handful of walnuts, roughly chopped (plus extra for garnish)
6 sprigs of fresh thyme leaves, stems removed (plus extra for garnish)
2 Tsp lemon juice; half a lemon in tact
Place the ricotta, honey, chopped walnuts, thyme leaves and lemon juice in a bowl, and stir to combine.
Halve and core the Red Rich Fruits Granny Smith Apples, then thinly slice.
To assemble, spread the crackers on a serving plate. Use a teaspoon to spoon the mixture onto the crackers.
Top each with two slices of Red Rich Fruits Granny Smith Apples. Garnish with the remaining walnuts, thyme leaves and a drizzle of honey.
Rubbing each apple slice across the lemon half will help prevent them from browning.
