ROYAL GALA APPLE SALTED CARAMEL STACKS

Featuring Red Rich Fruits’ Royal Gala Apples, these Royal Gala Apple Salted Caramel Stacks are a quick and easy sweet treat the whole family will love.

Makes 4 stacks

 

Ingredients

For the salted caramel

1 cup sugar

90g salted butter, room temperature and cut into small pieces

120ml (1/2 cup) thickened cream

1 teaspoon salt

 

For the apple stacks

2 Red Rich Fruits Royal Gala Apples

Chocolate bits or slivered almonds to garnish

 

Method

For the salted caramel

Stirring continuously and taking care not to let it burn, heat the sugar over a low-medium heat until it melts into a thick, brown liquid.

Add the butter as soon as the sugar is melted. With a whisk, stir gently for about 2 minutes until it is completely melted and combined.

Very slowly and stirring continuously, add in the thickened cream.

Gently boil for 1 minute, then remove from heat.

Stir in the salt then leave to cool before serving.

 

For the apple stacks

Core the Royal Gala apples, then slice into 1cm thick rounds.

Spread apple slices with salted caramel sauce.

Stack apple slices two high, and garnish with chocolate bits and slivered almonds.

 

Time-saving hack: Buy pre-made salted caramel sauce to have this sweet treat whipped up in no time!

 

Hints

  • Caramel is easy to burn. We recommend you make the caramel ahead of time so it can have your undivided attention!
  • When making the caramel, the liquid will get extremely hot. Be aware that each time you add a cold ingredient, the mixture will begin to bubble furiously and may spit.
  • The caramel can be stored in a tightly sealed container in the fridge for up to two weeks. Warm to room temperature before using it in a recipe.
  • Dipping the apple slices in apple juice will help reduce apple browning after slicing, without affecting the apple flavour.
