SIMPLE CHERRY COMPOTE
With just four ingredients, this Simple Cherry Compote recipe is a versatile and delicious way to enjoy seasonal Australian cherries at any time of day.
This recipe was developed in collaboration with Essteele: beautiful cookware made in Italy. It uses fresh Red Rich Fruits Cherries grown by Yarra Valley Cherries.
Makes approx. 300ml
Ingredients
300g fresh cherries, pitted
2 tbsp maple syrup
pinch of salt
1/4 tsp vanilla essence
To make the Simple Cherry Compote
1. Roughly chop the cherries, and place in a medium-sized saucepan (we found the Essteele Per Vita 2.8L saucepan to be the perfect size), then add the maple syrup and salt.
2. Stirring occasionally over medium-high heat, bring the mixture to a boil (approx. 5 mins).
3. Once boiling, reduce the heat and simmer, stirring occasionally until the liquid has reduced by half (approx. 5 mins).
3. Remove the mixture from the heat and allow to cool completely.
To Serve
This versatile Simple Cherry Compote is a perfect topping for yoghurt, ice cream, and pancakes; can be used in cheesecakes, and pairs beautifully with cheese and crackers on a cheese board.
